The Cooperative: The cooperative & coffee: The San Ignacio Province is nestled in the heights of Cajamarca region in Northern Peru close to Ecuador’s border. Founded in 1969, the Agraria Frontera San Ignacio Cooperative serves farms located in protected natural zones. The small producers focus on organic, sustainable practices to safeguard local wildlife, including the Spectacled Bear – the inspiration behind this coffee’s name. Coffee here is commonly fermented in wooden tanks built from fallen Romerillo trees. Peru El Oso is fully washed and once cleaned it is fermented for 18 to 36 hours and washed again, before being spread to dry for between 10 to 21 days.
