Light, juicy, and basically summer in a glass, this clarified Cold Brew Punch mixes this season's RISE with sweet peach syrup, lemon juice, and oat milk for the ultimate sunshine sip.
The secret? Clarification – a technique borrowed from the cocktail world, where the punch is filtered to remove suspended solids. The result? A creamy mouthfeel, with fruity complexity and a clear appearance.
Fair warning: this recipe takes a little patience. The cold brew needs to be prepared in advance, and clarifying with oat milk is a slower process than with dairy...Give yourself a couple of days for prep. But trust us, the final pour is more than worth the wait.
Prep:
Prepare cold brew in advance. We recommend using our seasonal blend RISE for its sweet and fruity flavour.
Peach Syrup - Step 1:
Wash soft, ripe peaches and remove the pits. Roughly chop them up into cubes with the skin on. Place the chopped peaches in a bowl or container and add an equal amount of sugar. Toss gently to coat.
Peach Syrup - Step 2:
Leave the mixture to sit for a couple of hours, stirring it periodically to ensure all of the sugar dissolves and the flavours are fully extracted from the peaches.
Peach Syrup - Step 3:
Strain the mixture through a sieve, and store it in a container/bottle in the fridge. You will have a few servings' worth of syrup, and it will keep for up to 10 days.
Cold Brew Punch - Step 1:
In a container, combine your premade cold brew, fresh lemon juice, and oat milk (or dairy milk). Stir gently to mix and encourage the solids to split.
Cold Brew Punch - Step 2:
Pour the mixture through a filter paper into a clean vessel to begin clarifying.
Repeat the filtration process once more (or up to twice more if needed) until the liquid becomes fully clarified and clear.
Cold brew Punch - Step 3:
Add the peach syrup to the clarified cold brew and stir until well combined.
Cold Brew Punch - Step 4:
Decant into a bottle and refrigerate until serving. It will last for up to 5 days (if you can resist drinking it all in one go).
Give the bottle a gentle shake and serve over ice (optional) in your favourite tall glass.
